Ingredients

  • 🥛 Heavy cream – 2 cups
  • 🍋 Lemon zest – 1 tsp
  • 🥚 Egg yolks – 6 large
  • 🍬 Sugar – 1/2 cup + more for topping
  • ✨ Vanilla extract – 1 tsp

Instructions

  • 🔥 Preheat oven to 300°F (150°C). Heat cream with lemon zest.
  • 🥚 Whisk egg yolks and sugar until pale and thick.
  • 🥛 Gradually add warm cream to egg mixture, stirring constantly. Add vanilla.
  • 🥣 Pour mixture into ramekins and bake in a water bath for 30-35 minutes.
  • ❄️ Let cool, then refrigerate for at least 2 hours. Sprinkle sugar on top and caramelize with a torch 🔥.
