Ingredients

  • 🐷 Pork shoulder – 3 lbs
  • 🧅 Onion – 1, quartered
  • 🧄 Garlic – 4 cloves, smashed
  • 🍊 Orange – 1, juiced
  • 🌿 Bay leaf – 2
  • 🌯 Tortillas – large, for serving
  • 🥑 Guacamole – for serving
  • 🍅 Salsa – for serving

Instructions

  • 🔥 Sear pork shoulder on all sides in a large pot.
  • 🧅 Add onion, garlic, orange juice, bay leaves, and enough water to cover the pork.
  • 🥘 Bring to a simmer, then cover and cook in a low oven (275°F/135°C) for 3 hours, or until the pork is very tender.
  • 🔪 Shred the pork with two forks, then broil until crispy.
  • 🌯 Serve the carnitas in warm tortillas with guacamole and salsa.
