Ingredients

  • 🍝 Spaghetti – 200g
  • 🥓 Guanciale or Pancetta – 100g, cubed
  • 🥚 Eggs – 3 large
  • 🧀 Pecorino Romano – 50g, grated
  • 🖤 Black Pepper – to taste

Instructions

  • 💧 Cook spaghetti in salted boiling water until al dente.
  • 🥓 Crisp guanciale in a pan until golden and set aside.
  • 🥚 Whisk eggs, pecorino, and black pepper in a bowl.
  • 🍝 Drain pasta, reserving some pasta water, and add to the pan with guanciale.
  • 🔥 Remove from heat, pour egg mixture over pasta, and toss quickly, adding pasta water as needed to create a creamy sauce. Serve immediately.
