Ingredients
- 🍝 Spaghetti – 200g
- 🥓 Guanciale or Pancetta – 100g, cubed
- 🥚 Eggs – 3 large
- 🧀 Pecorino Romano – 50g, grated
- 🖤 Black Pepper – to taste
Instructions
- 💧 Cook spaghetti in salted boiling water until al dente.
- 🥓 Crisp guanciale in a pan until golden and set aside.
- 🥚 Whisk eggs, pecorino, and black pepper in a bowl.
- 🍝 Drain pasta, reserving some pasta water, and add to the pan with guanciale.
- 🔥 Remove from heat, pour egg mixture over pasta, and toss quickly, adding pasta water as needed to create a creamy sauce. Serve immediately.
