Ingredients

  • Ravioli Dough:
  • - 2 cups all-purpose flour 🌾
  • - 3 large eggs 🥚
  • - 1 tbsp olive oil 🫒
  • - Pinch of salt 🧂
  • Caramelised Onion Filling:
  • - 3 large onions, thinly sliced 🧅
  • - 2 tbsp olive oil 🫒
  • - 1 tbsp balsamic vinegar 🍷
  • - 1 tsp brown sugar 🍚
  • - 1/2 cup ricotta cheese 🧀
  • - 1/4 cup grated Parmesan cheese 🧀
  • - Salt and pepper to taste 🧂
  • Sauce:
  • - 4 tbsp butter 🧈
  • - Fresh sage leaves 🌿
  • - Grated Parmesan cheese, for serving 🧀

Instructions

  • 1. Prepare the dough: Mix flour, eggs, olive oil, and salt. Knead until smooth. Rest for 30 mins. ⏲️
  • 2. Caramelize onions: Cook sliced onions in olive oil over low heat until golden brown and sweet. Add balsamic vinegar and brown sugar. Simmer. 🧅🔥
  • 3. Make the filling: Combine caramelized onions, ricotta, Parmesan, salt, and pepper. Mix well. 🥣
  • 4. Roll out dough: Divide the dough into two halves. Roll out thinly. 🍥
  • 5. Assemble ravioli: Place spoonfuls of filling on one sheet of dough. Cover with the other sheet. Press around filling. Cut into squares. 🔪
  • 6. Cook ravioli: Boil ravioli in salted water for 3-4 mins. 끓는 🍜
  • 7. Prepare sauce: Melt butter in a pan. Add sage leaves. Sauté until fragrant. 🧈🌿
  • 8. Serve: Toss ravioli with sage butter sauce. Garnish with Parmesan cheese. Serve immediately. 🍽️🧀
