Ingredients
- Ravioli Dough:
- - 2 cups all-purpose flour 🌾
- - 3 large eggs 🥚
- - 1 tbsp olive oil 🫒
- - Pinch of salt 🧂
- Caramelised Onion Filling:
- - 3 large onions, thinly sliced 🧅
- - 2 tbsp olive oil 🫒
- - 1 tbsp balsamic vinegar 🍷
- - 1 tsp brown sugar 🍚
- - 1/2 cup ricotta cheese 🧀
- - 1/4 cup grated Parmesan cheese 🧀
- - Salt and pepper to taste 🧂
- Sauce:
- - 4 tbsp butter 🧈
- - Fresh sage leaves 🌿
- - Grated Parmesan cheese, for serving 🧀
Instructions
- 1. Prepare the dough: Mix flour, eggs, olive oil, and salt. Knead until smooth. Rest for 30 mins. ⏲️
- 2. Caramelize onions: Cook sliced onions in olive oil over low heat until golden brown and sweet. Add balsamic vinegar and brown sugar. Simmer. 🧅🔥
- 3. Make the filling: Combine caramelized onions, ricotta, Parmesan, salt, and pepper. Mix well. 🥣
- 4. Roll out dough: Divide the dough into two halves. Roll out thinly. 🍥
- 5. Assemble ravioli: Place spoonfuls of filling on one sheet of dough. Cover with the other sheet. Press around filling. Cut into squares. 🔪
- 6. Cook ravioli: Boil ravioli in salted water for 3-4 mins. 끓는 🍜
