Ingredients

  • 🍚 Rice – long grain basmati
  • 🥔 Potatoes – thinly sliced
  • 🧅 Onion – thinly sliced
  • 🌿 Fresh herbs – chopped (parsley, dill)
  • 🍋 Lemon juice – 2 tablespoons
  • 🥄 Saffron – a pinch, steeped in hot water
  • 🧈 Butter – or oil

Instructions

  • 🍚 Rinse rice and soak in salted water for 30 minutes.
  • 🔥 Parboil rice until slightly firm, then drain.
  • 🥔 In a pot, layer thinly sliced potatoes at the bottom.
  • 🍚 Mix rice with saffron water and herbs. Gently layer over potatoes.
  • 🧈 Drizzle melted butter or oil over the rice. Cover and cook on low heat until crispy and golden.
