Ingredients

  • 🥩 Beef chuck – 2 inch cubes
  • 🥓 Bacon – chopped
  • 🧅 Onions – chopped
  • 🥕 Carrots – sliced
  • 🍄 Mushrooms – quartered
  • 🍷 Red wine – 1 bottle
  • 🧄 Garlic – minced
  • 🌿 Thyme – sprigs
  • 🍃 Bay leaf – 1

Instructions

  • 🥓 Cook bacon until crispy, then remove and set aside.
  • 🥩 Sear beef in bacon fat until browned on all sides.
  • 🧅 Sauté onions and carrots in the same pot.
  • 🍷 Add red wine, garlic, thyme, and bay leaf. Bring to a simmer.
  • 🥘 Return beef and bacon to the pot. Cover and simmer for 3 hours, or until beef is very tender. Add mushrooms during the last 30 minutes.
  • ✨ Serve hot, garnished with fresh parsley.
