Ingredients
- 🥩 Beef chuck – 2 inch cubes
- 🥓 Bacon – chopped
- 🧅 Onions – chopped
- 🥕 Carrots – sliced
- 🍄 Mushrooms – quartered
- 🍷 Red wine – 1 bottle
- 🧄 Garlic – minced
- 🌿 Thyme – sprigs
- 🍃 Bay leaf – 1
Instructions
- 🥓 Cook bacon until crispy, then remove and set aside.
- 🥩 Sear beef in bacon fat until browned on all sides.
- 🧅 Sauté onions and carrots in the same pot.
- 🍷 Add red wine, garlic, thyme, and bay leaf. Bring to a simmer.
- 🥘 Return beef and bacon to the pot. Cover and simmer for 3 hours, or until beef is very tender. Add mushrooms during the last 30 minutes.
- ✨ Serve hot, garnished with fresh parsley.
