Beef cheek in red wine sauce

Ingredients

  • 🥩 Beef cheeks – trimmed
  • 🧅 Onion – chopped
  • 🥕 Carrots – chopped
  • 🌿 Thyme – fresh sprigs
  • 🍷 Red wine – full-bodied
  • 🧄 Garlic – minced
  • 🥣 Beef broth – low sodium
  • 🧈 Butter – unsalted
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔥 Sear beef cheeks in a hot pan with oil until browned on all sides.
  • 🧅 Sauté onions, carrots, and garlic in the same pan.
  • 🍷 Deglaze the pan with red wine, scraping up any browned bits.
  • 🥘 Add beef cheeks back to the pan, then add beef broth and thyme. Braise in oven at 325°F (160°C) for 3 hours, or until tender.
  • ✨ Remove beef cheeks and strain the sauce. Simmer the sauce to reduce. Swirl in butter before serving over the beef cheeks.
