Beef cheek in red wine sauce

Ingredients
- 🥩 Beef cheeks – trimmed
- 🧅 Onion – chopped
- 🥕 Carrots – chopped
- 🌿 Thyme – fresh sprigs
- 🍷 Red wine – full-bodied
- 🧄 Garlic – minced
- 🥣 Beef broth – low sodium
- 🧈 Butter – unsalted
- 🧂 Salt & pepper – to taste
Instructions
- 🔥 Sear beef cheeks in a hot pan with oil until browned on all sides.
- 🧅 Sauté onions, carrots, and garlic in the same pan.
- 🍷 Deglaze the pan with red wine, scraping up any browned bits.
- 🥘 Add beef cheeks back to the pan, then add beef broth and thyme. Braise in oven at 325°F (160°C) for 3 hours, or until tender.
- ✨ Remove beef cheeks and strain the sauce. Simmer the sauce to reduce. Swirl in butter before serving over the beef cheeks.
