Ingredients
- 🥩 Beef chuck roast – 3 lbs
- 🧅 Onion – 1 large, chopped
- 🧄 Garlic – 4 cloves, minced
- 🌶️ Chipotle peppers in adobo sauce – 2-3
- 🌿 Oregano – 1 tbsp
- 🍋 Lime juice – 2 tbsp
- 🧂 Salt – to taste
- 🌶️ Cumin - 1 tbsp
Instructions
- 🔥 Sear the beef chuck roast on all sides in a large pot or Dutch oven.
- 🧅 Add chopped onion, minced garlic, chipotle peppers, oregano, cumin and salt to the pot.
- 💧 Pour in enough beef broth to almost cover the meat.
- 🥘 Bring to a simmer, then cover and cook in a low oven (275°F/135°C) or on the stovetop for 6 hours, or until the meat is very tender.
- ✨ Shred the beef with two forks, stir in lime juice, and serve with your favorite toppings.
