Ingredients

  • 🍗 Chicken – cut into pieces
  • 🧅 Onion – finely chopped
  • 🧄 Garlic – minced
  • 🌶️ Chili – sliced (adjust to taste)
  • 🥥 Coconut milk – for rich flavor
  • 🌿 Lemongrass – bruised
  • 🍃 Kaffir lime leaves – for aroma
  • 🥭 Ginger – grated
  • 🌱 Turmeric – ground
  • 🧂 Salt – to taste

Instructions

  • 🔥 Heat oil in a pan and sauté onions, garlic, and chili until fragrant.
  • 🥭 Add ginger, turmeric, lemongrass, and kaffir lime leaves; cook briefly.
  • 🍗 Add chicken and cook until browned on all sides.
  • 🥥 Pour in coconut milk and bring to a simmer.
  • 🥘 Reduce heat and cook until chicken is tender and sauce has thickened. Season with salt to taste. Serve hot with rice.
