Ingredients

  • 🫒 Olive oil – extra virgin
  • 🌿 Fresh parsley – chopped, for garnish

Instructions

  • 🌡️ Gently confit the bacalao in olive oil with garlic and chili until tender.
  • 🔥 Reserve the infused oil; this is the base for the pil pil.
  • 🥄 Emulsify the oil by slowly swirling it in a figure-eight pattern as it cools to create the pil pil sauce.
  • 🥘 Return the bacalao to the sauce, gently warming it through.
  • 🌿 Garnish with fresh parsley and serve immediately.
