Ingredients
- 🐟 Salt cod (bacalao) – soaked and desalted
- 🧄 Garlic – thinly sliced
- 🌶️ Dried chili peppers – a few, for flavor
- 🫒 Olive oil – extra virgin
- 🌿 Fresh parsley – chopped, for garnish
Instructions
- 🌡️ Gently confit the bacalao in olive oil with garlic and chili until tender.
- 🔥 Reserve the infused oil; this is the base for the pil pil.
- 🥄 Emulsify the oil by slowly swirling it in a figure-eight pattern as it cools to create the pil pil sauce.
- 🥘 Return the bacalao to the sauce, gently warming it through.
- 🌿 Garnish with fresh parsley and serve immediately.
