Ingredients

  • 🍚 Basmati Rice – 1 cup
  • 🥦 Mixed Vegetables (Carrots, Beans, Peas) – 1 cup
  • 🌱 Spinach – 1 cup chopped
  • 🥥 Coconut Milk – 1/2 cup
  • 🌶️ Ayurvedic Spice Mix (Turmeric, Cumin, Coriander) – 2 tbsp
  • 💧 Water – 2 cups
  • 🌿 Ghee – 1 tbsp

Instructions

  • 🔥 Heat ghee in a pot and add spices. Sauté for 1 minute until fragrant.
  • 🧅 Add mixed vegetables and spinach. Cook for 5 minutes.
  • 🍚 Add rice and water. Bring to a boil, then reduce heat and simmer covered for 20 minutes, or until rice is cooked.
  • 🥥 Stir in coconut milk and simmer for another 5 minutes.
  • 🌿 Garnish with fresh herbs and serve warm.
