Ingredients

  • 🍜 Arrowroot noodles – 200g
  • 🥒 Cucumber – julienned
  • 🥕 Carrot – julienned
  • 🥜 Peanut sauce – 2 tbsp
  • 🌶️ Chili oil – 1 tsp
  • 🌿 Cilantro – chopped for garnish
  • 🌰 Sesame seeds – for garnish
  • 🍶 Soy sauce – 2 tbsp
  • 🍚 Rice vinegar – 1 tbsp

Instructions

  • 🍜 Cook arrowroot noodles according to package directions, then rinse with cold water.
  • 🥒 Toss noodles with cucumber, carrot, peanut sauce, soy sauce, and rice vinegar.
  • 🌶️ Add chili oil to taste.
  • 🌿 Garnish with cilantro and sesame seeds.
  • ❄️ Serve immediately or chill for later.
