Ingredients

  • 🥓 Guanciale – diced
  • 🍅 Canned tomatoes – crushed
  • 🧀 Pecorino Romano – grated
  • 🌶️ Red pepper flakes – to taste
  • 🍝 Pasta – spaghetti or bucatini

Instructions

  • 🥓 Render guanciale in a pan until crispy.
  • 🌶️ Add red pepper flakes to the rendered fat.
  • 🍅 Add crushed tomatoes and simmer for 15 minutes.
  • 🍝 Cook pasta al dente, reserve some pasta water.
  • 🧀 Toss pasta with sauce, add pecorino and pasta water to create a creamy emulsion. Serve immediately.
