Ingredients
- 🥓 Guanciale – diced
- 🍅 Canned tomatoes – crushed
- 🧀 Pecorino Romano – grated
- 🌶️ Red pepper flakes – to taste
- 🍝 Pasta – spaghetti or bucatini
Instructions
- 🥓 Render guanciale in a pan until crispy.
- 🌶️ Add red pepper flakes to the rendered fat.
- 🍅 Add crushed tomatoes and simmer for 15 minutes.
- 🍝 Cook pasta al dente, reserve some pasta water.
- 🧀 Toss pasta with sauce, add pecorino and pasta water to create a creamy emulsion. Serve immediately.
