Ingredients
- 🥔 Baby Potatoes – boiled and peeled
- 🧅 Onions – finely chopped
- 🍅 Tomatoes – pureed
- 🧄 Ginger-Garlic Paste – 1 tbsp
- 🌶️ Red Chili Powder – 1 tsp
- 🌱 Coriander Leaves – for garnish
- 🥄 Garam Masala – 1/2 tsp
Instructions
- 🔥 Heat oil in a pan and lightly fry the potatoes until golden brown. Set aside.
- 🧅 In the same pan, sauté onions until golden. Add ginger-garlic paste and cook for a minute.
- 🍅 Add tomato puree, red chili powder, turmeric powder, and coriander powder. Cook until the oil separates.
- 🥔 Add the fried potatoes and garam masala. Mix well and simmer for 15-20 minutes, adding water as needed.
- 🌱 Garnish with fresh coriander leaves and serve hot with rice or roti.
