Wood Fired Polenta Bread

Ingredients
- 🌽 Polenta – 1 cup
- 💧 Water – 4 cups
- 🧂 Salt – 1 tsp
- 🌿 Herbs – 2 tbsp, chopped (rosemary/thyme)
- 🧀 Cheese – 1/2 cup, grated Parmesan
- 🫒 Olive oil – 2 tbsp
Instructions
- 🔥 Preheat wood fired oven or grill to medium-high heat.
- 💧 Bring water and salt to a boil in a pot. Slowly whisk in polenta.
- 🥣 Reduce heat to low and cook, stirring constantly, until polenta is thick (about 30 minutes).
- 🌿 Stir in herbs and cheese.
- 🍞 Spread polenta mixture onto a baking sheet or cast iron skillet. Drizzle with olive oil.
- ♨️ Bake or grill until the bread is golden brown and slightly crispy.
