Wood Fired Polenta Bread

Ingredients

  • 🌽 Polenta – 1 cup
  • 💧 Water – 4 cups
  • 🧂 Salt – 1 tsp
  • 🌿 Herbs – 2 tbsp, chopped (rosemary/thyme)
  • 🧀 Cheese – 1/2 cup, grated Parmesan
  • 🫒 Olive oil – 2 tbsp

Instructions

  • 🔥 Preheat wood fired oven or grill to medium-high heat.
  • 💧 Bring water and salt to a boil in a pot. Slowly whisk in polenta.
  • 🥣 Reduce heat to low and cook, stirring constantly, until polenta is thick (about 30 minutes).
  • 🌿 Stir in herbs and cheese.
  • 🍞 Spread polenta mixture onto a baking sheet or cast iron skillet. Drizzle with olive oil.
  • ♨️ Bake or grill until the bread is golden brown and slightly crispy.
