Ingredients
- 🐔 Whole Chicken – about 4 lbs
- 🍋 Lemon – 1 quartered
- 🧄 Garlic – 4 cloves, minced
- 🌿 Fresh Herbs – rosemary, thyme
- 🧅 Onion – 1 quartered
- 🥕 Carrots – 2 chopped
- 🥔 Potatoes – 2 chopped
- 🧈 Butter – 2 tbsp, softened
- 🧂 Salt & Pepper – to taste
Instructions
- 🔥 Preheat oven to 400°F (200°C).
- 🐔 Prepare chicken: Pat dry, rub with butter, salt, pepper, and herbs. Stuff cavity with lemon, garlic, and onion.
- 🥕 Arrange carrots and potatoes in a roasting pan, place chicken on top.
- ⏲️ Roast for 1 hr 30 mins, or until internal temperature reaches 165°F (74°C).
- ✨ Let rest for 10 mins before carving and serving.
