Ingredients
- 🍝 Spaghetti – 200g
- 🦪 Fresh clams (vongole) – 500g
- 🧄 Garlic – 3 cloves, minced
- 🌶️ Red pepper flakes – to taste
- 🌿 Fresh parsley – chopped
- 🍷 White wine – 1/2 cup
- 🫒 Olive oil – 3 tbsp
Instructions
- 🧄 Sauté garlic and red pepper flakes in olive oil until fragrant.
- 🍷 Add white wine and let it reduce slightly.
- 🍝 Add clams and cover until they open. Discard any that don't open.
- 🍝 Cook spaghetti according to package directions. Reserve some pasta water.
- 🍝 Toss spaghetti with clam sauce, adding pasta water as needed. Garnish with parsley and serve.
