Vongole Pasta

Ingredients

  • 🍝 Spaghetti – 200g
  • 🦪 Fresh clams (vongole) – 500g
  • 🧄 Garlic – 3 cloves, minced
  • 🌶️ Red pepper flakes – to taste
  • 🌿 Fresh parsley – chopped
  • 🍷 White wine – 1/2 cup
  • 🫒 Olive oil – 3 tbsp

Instructions

  • 🧄 Sauté garlic and red pepper flakes in olive oil until fragrant.
  • 🍷 Add white wine and let it reduce slightly.
  • 🍝 Add clams and cover until they open. Discard any that don't open.
  • 🍝 Cook spaghetti according to package directions. Reserve some pasta water.
  • 🍝 Toss spaghetti with clam sauce, adding pasta water as needed. Garnish with parsley and serve.
