Vodka Capellini

Ingredients
- π Capellini pasta β 8 oz
- π§ Onion β Β½ cup, chopped
- π§ Garlic β 2 cloves, minced
- π₯« Tomato paste β 2 tbsp
- π Crushed tomatoes β 1 can (28 oz)
- π₯ Heavy cream β Β½ cup
- πΈ Vodka β ΒΌ cup
- πΏ Fresh basil β chopped, for garnish
- π§ Parmesan cheese β grated, for serving
- πΆοΈ Red pepper flakes β to taste
- π§ Salt & Pepper β to taste
- π« Olive oil β 2 tbsp
Instructions
- π Cook capellini according to package directions. Reserve about Β½ cup of pasta water before draining.
- π₯ Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and red pepper flakes; cook for 1 minute more.
- π Stir in tomato paste and cook for 1 minute. Add crushed tomatoes and vodka. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- π₯ Stir in heavy cream, salt, and pepper. Simmer for 5 minutes. If the sauce is too thick, add a little pasta water to thin it out.
- π Add the cooked capellini to the sauce and toss to coat. Serve immediately, garnished with fresh basil and grated Parmesan cheese. Enjoy! β¨
