Ingredients

  • 2 1/4 cups all-purpose flour 🍚
  • 1 teaspoon baking soda
  • 1 teaspoon salt 🧂
  • 1 cup (2 sticks) unsalted butter, softened 🧈
  • 2 cups granulated sugar 🍥
  • 4 large eggs 🥚
  • 1 teaspoon vanilla extract 🍦
  • 1 cup buttermilk
  • 1 (20 ounce) can crushed pineapple, undrained 🍍
  • Frosting: 8 ounces cream cheese, softened 🧀
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional) 🌰

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. 🔥
  • In a medium bowl, whisk together flour, baking soda, and salt. 🥣
  • In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. 🥄
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Beat until just combined. 🥛
  • Stir in the undrained crushed pineapple. 🍍
  • Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. ⏱️
  • Let the cake cool completely in the pan. ❄️
  • For the frosting: In a large bowl, beat together the cream cheese and butter until smooth. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla. 🍥
  • Frost the cooled cake with the cream cheese frosting. 🎂
  • Sprinkle with chopped pecans or walnuts, if desired. 🌰
  • Cut into squares and serve. Enjoy! 🎉
