Ingredients
- 🥕 Mixed vegetables (carrots, peas, beans) – 2 cups
- 🧅 Onion – 1 medium, chopped
- 🍅 Tomato – 2 medium, pureed
- 🧄 Garlic – 2 cloves, minced
- 🌶️ Curry powder – 2 tbsp
- 🥥 Coconut milk – 1 can
Instructions
- 🔥 Heat oil in a pan and add onions. Sauté until golden brown.
- 🧄 Add garlic and cook for another minute until fragrant.
- 🍅 Pour in tomato puree and simmer until it thickens.
- 🌶️ Add curry powder and mixed vegetables. Stir well.
- 🥥 Pour in coconut milk, bring to a simmer, and cook until vegetables are tender.
