Ingredients

  • 🍚 Arborio Rice – 1.5 cups
  • 🍄 Mixed Mushrooms – 1 lb, sliced
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🌿 Fresh Thyme – 2 sprigs
  • 🧀 Parmesan Cheese – 1/2 cup, grated
  • 🍶 White Wine – 1/2 cup
  • 🫘 Vegetable Broth – 6 cups, warm
  • 🧈 Butter – 2 tbsp
  • 🛢️ Truffle Oil – to taste
  • 🧂 Salt & Pepper – to taste

Instructions

  • 🧅 Sauté chopped onion and garlic in butter until softened.
  • 🍚 Add Arborio rice and toast for 2-3 minutes.
  • 🥂 Deglaze with white wine, stirring until absorbed.
  • 🍄 Gradually add warm vegetable broth, one ladle at a time, stirring constantly until absorbed before adding more.
  • 🌿 Stir in mushrooms, thyme, and parmesan cheese during the last 10 minutes of cooking.
  • 🛢️ Finish with a drizzle of truffle oil, season with salt and pepper, and serve immediately.
