Ingredients
- 🍚 Arborio Rice – 1.5 cups
- 🍄 Mixed Mushrooms – 1 lb, sliced
- 🧅 Onion – 1 medium, chopped
- 🧄 Garlic – 2 cloves, minced
- 🌿 Fresh Thyme – 2 sprigs
- 🧀 Parmesan Cheese – 1/2 cup, grated
- 🍶 White Wine – 1/2 cup
- 🫘 Vegetable Broth – 6 cups, warm
- 🧈 Butter – 2 tbsp
- 🛢️ Truffle Oil – to taste
- 🧂 Salt & Pepper – to taste
Instructions
- 🧅 Sauté chopped onion and garlic in butter until softened.
- 🍚 Add Arborio rice and toast for 2-3 minutes.
- 🥂 Deglaze with white wine, stirring until absorbed.
- 🍄 Gradually add warm vegetable broth, one ladle at a time, stirring constantly until absorbed before adding more.
- 🌿 Stir in mushrooms, thyme, and parmesan cheese during the last 10 minutes of cooking.
- 🛢️ Finish with a drizzle of truffle oil, season with salt and pepper, and serve immediately.
