Truffle Braised Pork Belly

Ingredients
- 🐷 Pork Belly – 1.5 lbs, skin on
- 🧅 Onion – 1 large, chopped
- 🥕 Carrots – 2 medium, chopped
- 🌿 Celery – 2 stalks, chopped
- 🧄 Garlic – 4 cloves, minced
- 🍄 Truffle Oil – 2 tbsp
- 🍷 Red Wine – 1 cup
- 🍲 Chicken Broth – 4 cups
- 🌿 Thyme – a few sprigs
- 🌿 Rosemary – a few sprigs
- 🧂 Salt – to taste
- 🌶️ Pepper – to taste
Instructions
- 🔥 Sear pork belly on all sides until golden brown. Set aside.
- 🧅 Sauté onions, carrots, and celery in the same pot until softened.
- 🧄 Add garlic and cook for another minute until fragrant.
- 🍷 Deglaze the pot with red wine, scraping up any browned bits.
- 🍲 Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a simmer.
- 🐷 Return pork belly to the pot, ensuring it's mostly submerged. Braise in a preheated oven at 325°F (160°C) for 3 hours, or until the pork is very tender.
- 🔪 Remove pork belly from the braising liquid. Let it rest before slicing.
- 🍄 Strain the braising liquid and reduce it slightly. Stir in truffle oil.
- ✨ Serve sliced pork belly with the truffle-infused sauce.
