Ingredients

  • 🐷 Pork Belly – 1.5 lbs, skin on
  • 🧅 Onion – 1 large, chopped
  • 🥕 Carrots – 2 medium, chopped
  • 🌿 Celery – 2 stalks, chopped
  • 🧄 Garlic – 4 cloves, minced
  • 🍄 Truffle Oil – 2 tbsp
  • 🍷 Red Wine – 1 cup
  • 🍲 Chicken Broth – 4 cups
  • 🌿 Thyme – a few sprigs
  • 🌿 Rosemary – a few sprigs
  • 🧂 Salt – to taste
  • 🌶️ Pepper – to taste

Instructions

  • 🔥 Sear pork belly on all sides until golden brown. Set aside.
  • 🧅 Sauté onions, carrots, and celery in the same pot until softened.
  • 🧄 Add garlic and cook for another minute until fragrant.
  • 🍷 Deglaze the pot with red wine, scraping up any browned bits.
  • 🍲 Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a simmer.
  • 🐷 Return pork belly to the pot, ensuring it's mostly submerged. Braise in a preheated oven at 325°F (160°C) for 3 hours, or until the pork is very tender.
  • 🔪 Remove pork belly from the braising liquid. Let it rest before slicing.
  • 🍄 Strain the braising liquid and reduce it slightly. Stir in truffle oil.
  • ✨ Serve sliced pork belly with the truffle-infused sauce.
