Ingredients
- 🍋 Lemongrass – 2 stalks, bruised
- 🌿 Galangal – 3-4 slices
- 🍃 Kaffir lime leaves – 4-5 leaves
- 🌶️ Chili peppers – 2-3, sliced
- 🍄 Mushrooms – 1 cup, sliced
- 🍤 Shrimp or other protein – 1/2 lb
- 🍅 Tomatoes – 1 cup, quartered
- 🐟 Fish sauce – 2 tbsp
- 🍈 Lime juice – 2 tbsp
- 🌿 Cilantro – for garnish
Instructions
- 🔥 Bring broth to a boil with lemongrass, galangal, and kaffir lime leaves.
- 🌶️ Add chili peppers and mushrooms; simmer for 5 minutes.
- 🍤 Add shrimp or other protein and tomatoes; cook until protein is cooked through.
- 🐟 Stir in fish sauce and lime juice to taste.
- 🌿 Garnish with cilantro and serve hot.
