Ingredients

  • 🍋 Lemongrass – 2 stalks, bruised
  • 🌿 Galangal – 3-4 slices
  • 🍃 Kaffir lime leaves – 4-5 leaves
  • 🌶️ Chili peppers – 2-3, sliced
  • 🍄 Mushrooms – 1 cup, sliced
  • 🍤 Shrimp or other protein – 1/2 lb
  • 🍅 Tomatoes – 1 cup, quartered
  • 🐟 Fish sauce – 2 tbsp
  • 🍈 Lime juice – 2 tbsp
  • 🌿 Cilantro – for garnish

Instructions

  • 🔥 Bring broth to a boil with lemongrass, galangal, and kaffir lime leaves.
  • 🌶️ Add chili peppers and mushrooms; simmer for 5 minutes.
  • 🍤 Add shrimp or other protein and tomatoes; cook until protein is cooked through.
  • 🐟 Stir in fish sauce and lime juice to taste.
  • 🌿 Garnish with cilantro and serve hot.
