The Strawberry Britón Tart

Ingredients
- 🍓 500g fresh strawberries, hulled and halved
- 🧈 150g cold unsalted butter, cubed
- 🍚 250g plain flour, plus extra for dusting
- 🥚 1 large egg yolk
- 💧 2-3 tbsp ice water
- 🍚 50g icing sugar
- 🍋 Zest of 1 lemon
- 🌰 50g ground almonds
- 🥄 2 tbsp apricot jam, warmed
- 🌱 Fresh mint leaves, for garnish (optional)
Instructions
- 🥣 Make the pastry: In a large bowl, rub the butter into the flour until it resembles breadcrumbs. 🧈+🍚
- 🥚 Add the egg yolk, icing sugar, and lemon zest. Mix well. 🍋
- 💧 Gradually add ice water, mixing until the dough just comes together. Form into a disc, wrap in cling film, and chill for 30 minutes. ❄️
- 🔥 Preheat oven to 180°C/gas mark 4. On a lightly floured surface, roll out the pastry and line a 23cm tart tin. Prick the base with a fork and blind bake for 15 minutes. Remove the baking beans and bake for a further 10 minutes, or until golden. ⏰
- 🌰 Sprinkle the ground almonds over the base of the tart. This will prevent the base from becoming soggy. 👍
- 🍓 Arrange the strawberries in a decorative pattern over the almond layer.✨
- 🍯 Brush the strawberries with warmed apricot jam to give them a glossy finish.🌟
- 🍃 Garnish with fresh mint leaves, if desired. Serve and enjoy! 😋
