Thai Tea Crème Brûlée

Ingredients

  • 2 cups heavy cream 🥛
  • 1 cup whole milk 🥛
  • 1/4 cup Thai tea leaves 🍃
  • 5 large egg yolks 🥚
  • 1/2 cup granulated sugar 🍚
  • 1 tsp vanilla extract 🥄
  • Pinch of salt 🤏
  • 1/4 cup granulated sugar (for brûléeing) 🍚

Instructions

  • Preheat oven to 300°F (150°C). 🔥
  • In a saucepan, combine heavy cream, whole milk, and Thai tea leaves. Bring to a simmer over medium heat. Remove from heat and let steep for 20 minutes. ⏳
  • Strain the mixture through a fine-mesh sieve, pressing on the tea leaves to extract as much flavor as possible. Discard the tea leaves. 🗑️
  • In a bowl, whisk together egg yolks, sugar, vanilla extract, and salt until pale and smooth. 🥣
  • Gradually whisk the warm cream mixture into the egg yolk mixture until combined. 🔄
  • Pour the mixture into six ramekins. 🏺
  • Place the ramekins in a baking dish and add hot water to the dish, filling it halfway up the sides of the ramekins. 🛁
  • Bake for 30-40 minutes, or until the edges are set but the centers are still slightly jiggly. 🍮
  • Remove from the oven and let cool completely. Then, refrigerate for at least 2 hours to chill. ❄️
  • Before serving, sprinkle a thin, even layer of sugar over the top of each crème brûlée. 🔥 Use a kitchen torch to caramelize the sugar, creating a brittle crust. ✨
  • Let the sugar cool and harden for a few minutes before serving. Enjoy! 🎉
