Ingredients
- 2 cups heavy cream 🥛
- 1 cup whole milk 🥛
- ¾ cup granulated sugar 🍚
- 4 large egg yolks 🥚
- 1 tsp vanilla extract 🥄
- 1 tbsp Thai tea leaves (or 2 Thai tea bags) 🍃
- Pinch of salt 🧂
Instructions
- Steep Thai tea leaves in warm milk for 5 mins. Strain and discard leaves. 🍵
- Whisk egg yolks and sugar together until pale and thick.🥚🍚
- Heat Thai tea infused milk and cream in a saucepan over medium heat until simmering. 🌡️
- Slowly drizzle hot cream mixture into egg yolk mixture, whisking constantly. 🥣
- Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5 minutes). Do not boil! 🔥
- Remove from heat and stir in vanilla extract and salt. 🥄🧂
- Strain the custard through a fine-mesh sieve to remove any lumps. 🫛
- Let the custard cool completely, then chill in the refrigerator for at least 4 hours (or preferably overnight). ❄️
- Churn the chilled custard in an ice cream maker according to the manufacturer's instructions. 🍦
- Transfer the gelato to an airtight container and freeze for at least 2 hours before serving. 🧊
