Thai Gelato

Ingredients

  • 2 cups heavy cream 🥛
  • 1 cup whole milk 🥛
  • ¾ cup granulated sugar 🍚
  • 4 large egg yolks 🥚
  • 1 tsp vanilla extract 🥄
  • 1 tbsp Thai tea leaves (or 2 Thai tea bags) 🍃
  • Pinch of salt 🧂

Instructions

  • Steep Thai tea leaves in warm milk for 5 mins. Strain and discard leaves. 🍵
  • Whisk egg yolks and sugar together until pale and thick.🥚🍚
  • Heat Thai tea infused milk and cream in a saucepan over medium heat until simmering. 🌡️
  • Slowly drizzle hot cream mixture into egg yolk mixture, whisking constantly. 🥣
  • Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5 minutes). Do not boil! 🔥
  • Remove from heat and stir in vanilla extract and salt. 🥄🧂
  • Strain the custard through a fine-mesh sieve to remove any lumps. 🫛
  • Let the custard cool completely, then chill in the refrigerator for at least 4 hours (or preferably overnight). ❄️
  • Churn the chilled custard in an ice cream maker according to the manufacturer's instructions. 🍦
  • Transfer the gelato to an airtight container and freeze for at least 2 hours before serving. 🧊
  • Scoop and enjoy! 🎉
