Ingredients
- ๐ Pineapple rind โ from 1 pineapple
- ๐ง Water โ 4 cups
- ๐ค Piloncillo or brown sugar โ 1 cup
- ๐ฟ Cinnamon stick โ 1
- ๐ถ๏ธ Optional: Chili powder to taste
Instructions
- ๐ Combine pineapple rind, piloncillo/brown sugar, and cinnamon stick in a large jar.
- ๐ง Add water, ensuring the rinds are submerged. Use a weight if necessary.
- โณ Cover the jar loosely with cheesecloth or a lid and let it ferment at room temperature for 3-5 days.
- ๐งช Taste daily. It should be slightly sweet and bubbly.
- ๐ง Strain the tepache and refrigerate to stop fermentation. Serve chilled.
