Ingredients
- 🍚 Poha (flattened rice) – 1 cup
- 🧅 Onion – finely chopped
- 🥔 Potato – diced
- 🌶️ Green chilies – chopped
- 🍋 Lemon – for garnish
- 🫘 Mustard seeds – 1 tsp
- 🍃 Curry leaves – 8-10
Instructions
- 🍚 Rinse poha gently and set aside to soften.
- 🔥 Heat oil, add mustard seeds, and let them splutter. Add curry leaves, green chilies, and onions. Sauté until golden.
- 🥔 Add potatoes and cook until tender.
- 🧂 Add turmeric powder, salt, and mix well. Add the softened poha and mix gently.
- 🍋 Garnish with lemon juice and fresh coriander before serving warm.
