Ingredients

  • 🍚 Poha (flattened rice) – 1 cup
  • 🧅 Onion – finely chopped
  • 🥔 Potato – diced
  • 🌶️ Green chilies – chopped
  • 🍋 Lemon – for garnish
  • 🫘 Mustard seeds – 1 tsp
  • 🍃 Curry leaves – 8-10

Instructions

  • 🍚 Rinse poha gently and set aside to soften.
  • 🔥 Heat oil, add mustard seeds, and let them splutter. Add curry leaves, green chilies, and onions. Sauté until golden.
  • 🥔 Add potatoes and cook until tender.
  • 🧂 Add turmeric powder, salt, and mix well. Add the softened poha and mix gently.
  • 🍋 Garnish with lemon juice and fresh coriander before serving warm.
