Ingredients
- 1 cup dried fava beans, soaked overnight 🫘
- 1/2 cup chopped cilantro 🌿
- 1/2 cup chopped parsley 🌿
- 1/2 cup chopped leek or green onions 🧅
- 4 cloves garlic, minced 🧄
- 1 small onion, chopped 🧅
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon chili powder 🌶️
- 1/4 teaspoon baking soda
- Salt and pepper to taste
- Vegetable oil for frying 🛢️
Instructions
- Drain and rinse the soaked fava beans. 🚿
- In a food processor, combine the fava beans, cilantro, parsley, leek/green onions, garlic, onion, cumin, coriander, chili powder, baking soda, salt, and pepper. 🥣
- Process until a coarse paste forms. Do not over-process. ⚠️
- If the mixture is too dry, add a little water, 1 tablespoon at a time. 💧
- Cover the mixture and refrigerate for at least 30 minutes. ❄️
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). 🔥
- Shape the ta'ameya mixture into small patties or balls. 🥄
- Carefully drop the ta'ameya into the hot oil. Fry until golden brown and crispy, about 3-4 minutes per side. ⏲️
- Remove the ta'ameya from the oil and drain on paper towels. 📄
- Serve hot in pita bread with tahini sauce, salad, and pickles. 🥙
