Ingredients
- 🥩 Steak – 2 (about 6oz each)
- 🍠 Sweet Potato – 1 large, cubed
- 🫒 Olive Oil – 2 tablespoons
- 🌿 Rosemary – 1 sprig
- 🧂 Salt & Pepper – to taste
Instructions
- 🔥 Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, pepper, and rosemary. Roast for 20-25 minutes.
- 🥩 Season steak with salt and pepper.
- 🍳 Heat olive oil in a skillet over medium-high heat. Sear steak for 3-4 minutes per side for medium-rare.
- 🍠 Let steak rest for 5 minutes before slicing. Serve with roasted sweet potatoes.
