Ingredients

  • 🍝 Rigatoni pasta – 1 pound
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🌶️ Red pepper flakes – 1 tsp (or to taste)
  • 🍅 Tomato paste – 6 oz can
  • 🥛 Heavy cream – 1/2 cup
  • 🍹 Vodka – 1/4 cup
  • 🧀 Parmesan cheese – grated, for serving
  • 🌿 Fresh basil – for garnish

Instructions

  • 🍝 Cook rigatoni according to package directions.
  • 🧅 Sauté onion and garlic in olive oil until softened. Add red pepper flakes.
  • 🍅 Stir in tomato paste and cook for 2 minutes. Deglaze with vodka.
  • 🥛 Add heavy cream and simmer until sauce thickens. Season with salt and pepper.
