Ingredients

  • 🍝 Spaghetti – 200g
  • 🥓 Guanciale/Pancetta – 100g, cubed
  • 🥚 Eggs – 3 large
  • 🧀 Pecorino Romano – 50g, grated
  • 🖤 Black pepper – to taste

Instructions

  • 💧 Cook spaghetti in salted boiling water until al dente.
  • 🥓 While pasta cooks, sauté guanciale until crispy.
  • 🥚 In a bowl, whisk eggs, pecorino romano, and black pepper.
  • 🍝 Drain spaghetti, reserving some pasta water. Add spaghetti to the pan with guanciale.
  • 🔥 Remove from heat, add egg mixture, and toss quickly. Add pasta water if needed to create a creamy sauce. Serve immediately.
