Ingredients
- 🍝 Spaghetti – 200g
- 🥓 Guanciale/Pancetta – 100g, cubed
- 🥚 Eggs – 3 large
- 🧀 Pecorino Romano – 50g, grated
- 🖤 Black pepper – to taste
Instructions
- 💧 Cook spaghetti in salted boiling water until al dente.
- 🥓 While pasta cooks, sauté guanciale until crispy.
- 🥚 In a bowl, whisk eggs, pecorino romano, and black pepper.
- 🍝 Drain spaghetti, reserving some pasta water. Add spaghetti to the pan with guanciale.
- 🔥 Remove from heat, add egg mixture, and toss quickly. Add pasta water if needed to create a creamy sauce. Serve immediately.
