Ingredients
- 🐑 Lamb shoulder – 3 lbs
- 🌶️ Dried chilies – ancho, guajillo
- 🧅 Onion – 1 large, quartered
- 🧄 Garlic – 4 cloves, minced
- 🌿 Bay leaves – 2
- 🌮 Corn tortillas
- 🧀 Cheese – for melting
- 🧅 Cilantro & onion – for garnish
Instructions
- 🔥 Sear lamb until browned. Rehydrate dried chilies in hot water.
- 🥘 Blend chilies with onion, garlic, and spices to make a paste.
- ♨️ Braise lamb in chili paste and broth until tender.
- 🔪 Shred lamb and dip tortillas in the braising liquid, then fry on a griddle.
- 🌮 Fill tortillas with lamb and cheese, melt cheese, and garnish with cilantro and onion.
