Ingredients
- 🥩 Beef or Lamb Roast – 3-4 lbs
- 🧅 Onions – 2 large, quartered
- 🥕 Carrots – 3 large, chopped
- 🥔 Potatoes – 4 medium, quartered
- 🧄 Garlic – 4 cloves, minced
- 🌿 Rosemary – 2 sprigs
- 🫒 Olive Oil – 2 tbsp
- 🧂 Salt & Pepper – to taste
Instructions
- 🔥 Preheat oven to 300°F (150°C).
- 🥩 Sear the roast on all sides in a large pot or Dutch oven.
- 🧅 Add onions, carrots, potatoes, and garlic around the roast.
- 🌿 Season with rosemary, salt, and pepper. Drizzle with olive oil.
- 🥘 Cover and slow roast in the oven for 3 hours, or until the meat is tender.
