Ingredients
- 🥔 Potatoes – thinly sliced
- 🧂 Salt – to taste
- 🌶️ Pepper – to taste
- 🛢️ Cooking oil – for frying
Instructions
- 🥔 Cut potatoes into very thin strips (shoestring).
- 💧 Soak in cold water for 30 minutes, then pat dry.
- 🔥 Heat oil to 350°F (175°C) for the first fry.
- 🍟 Fry potatoes in batches until soft but not brown.
- 🌡️ Increase oil to 400°F (200°C) and fry until golden and crispy.
- 🧂 Season with salt and pepper immediately after frying.
