Ingredients
- 🥚 Salted egg yolks – mashed
- 🐚 Mussels – cleaned
- 🧅 Onion – chopped
- 🧄 Garlic – minced
- 🌶️ Chili – chopped (optional)
- 🥥 Coconut milk – 1 can
- 🌿 Curry leaves – few sprigs
- 🍋 Lime – 1/2 for juice
Instructions
- 🔥 Sauté onions, garlic, and chili in oil until fragrant.
- 🥚 Add mashed salted egg yolks and cook until slightly grainy.
- 🌿 Stir in curry leaves and coconut milk; simmer gently.
- 🐚 Add mussels and cook until they open (discard any that don't).
- 🍋 Squeeze lime juice over the curry and serve hot with rice.
