Ingredients
- 🍚 Arborio Rice – 1.5 cups
- 🐟 Salmon Fillet – 1 lb, skin off
- 🧅 Onion – 1 medium, chopped
- 🌿 Fresh Parsley – chopped, for garnish
- 🧀 Parmesan Cheese – grated, for serving
- 🍶 White Wine – 1/2 cup (optional)
- 🍋 Lemon – 1/2, for juice
- 💧 Vegetable Broth – 4 cups, warm
Instructions
- 🔥 Sauté onion in olive oil until softened. Add rice and toast for 2 mins.
- 🍷 Deglaze with white wine (optional), then add warm broth, 1 cup at a time, stirring until absorbed before adding more.
- 🐟 While rice cooks, pan-sear or bake salmon until cooked through. Flake into bite-sized pieces.
- 🍚 Once rice is creamy and al dente, stir in salmon, lemon juice, and parmesan cheese.
- 🌿 Garnish with fresh parsley and serve immediately.
