Ingredients
- 🍚 Rice noodles – 8 oz
- 🥩 Beef or Tofu – 1 lb, thinly sliced
- 🌿 Fresh herbs (mint, cilantro, basil) – 1 cup
- 🥕 Carrots – 1/2 cup, julienned
- 🥒 Cucumber – 1/2 cup, julienned
- 🥜 Peanuts – 1/4 cup, chopped
- 🌶️ Chili – optional, for spice
- 🐟 Fish sauce – 2 tbsp
- 🍋 Lime juice – 2 tbsp
- 🍚 Sugar – 1 tbsp
- 🧄 Garlic – 2 cloves, minced
- 💧 Water – 2 tbsp
Instructions
- 🍜 Cook rice noodles according to package directions. Rinse and set aside.
- 🥩 Stir-fry beef or tofu until cooked through. Season with salt and pepper.
- 🥕 Combine carrots, cucumber, herbs, and peanuts in a bowl.
- 🐟 Prepare the sauce: mix fish sauce, lime juice, sugar, garlic, water, and chili (if using).
- 🍲 Assemble the dish: Arrange noodles, beef/tofu, and vegetables in bowls. Drizzle with sauce and serve.
