Ingredients
- 🎃 Pumpkin – cubed
- 🌶️ Red Pepper – sliced
- 🧀 Ricotta Cheese – fresh
- 🍝 Cannelloni Pasta – dried tubes

- 🌿 Fresh Herbs (Sage/Thyme) – chopped
- 🍅 Tomato Sauce – jarred or homemade
- 🧀 Parmesan Cheese – grated
- Olive Oil – for roasting
Instructions
- 🎃 Roast pumpkin and red pepper with olive oil, salt and pepper until tender.
- 🧅 Sauté onion and garlic, then mix with ricotta, roasted vegetables, and herbs.
- 🍝 Stuff the cannelloni tubes with the ricotta-vegetable mixture.
