Ingredients

  • 🐑 Mutton leg – 1 (approx 2kg)
  • 🧄 Garlic – 6 cloves, minced
  • 🌿 Rosemary – 2 sprigs
  • 🍋 Lemon – 1, juiced
  • 🫒 Olive oil – 3 tbsp
  • 🥔 Potatoes – 500g, quartered
  • 🥕 Carrots – 2, chopped
  • 🧅 Onions – 2, quartered
  • 🧂 Salt & pepper – to taste

Instructions

  • 🔥 Preheat oven to 200°C (400°F).
  • 🐑 Prepare mutton: score the surface, rub with garlic, rosemary, lemon juice, olive oil, salt, and pepper.
  • 🥕 In a roasting pan, arrange potatoes, carrots, and onions.
  • 🥘 Place mutton on top of the vegetables and roast for 1 hour 30 mins, or until cooked through.
  • ✨ Rest for 10 mins before carving and serving with the roasted vegetables.
