Ingredients
- 🐑 Mutton leg – 1 (approx 2kg)
- 🧄 Garlic – 6 cloves, minced
- 🌿 Rosemary – 2 sprigs
- 🍋 Lemon – 1, juiced
- 🫒 Olive oil – 3 tbsp
- 🥔 Potatoes – 500g, quartered
- 🥕 Carrots – 2, chopped
- 🧅 Onions – 2, quartered
- 🧂 Salt & pepper – to taste
Instructions
- 🔥 Preheat oven to 200°C (400°F).
- 🐑 Prepare mutton: score the surface, rub with garlic, rosemary, lemon juice, olive oil, salt, and pepper.
- 🥕 In a roasting pan, arrange potatoes, carrots, and onions.
- 🥘 Place mutton on top of the vegetables and roast for 1 hour 30 mins, or until cooked through.
- ✨ Rest for 10 mins before carving and serving with the roasted vegetables.
