Ingredients
- 🪿 Goose – 1 whole (10-12 lbs)
- 🧅 Onion – 2, quartered
- 🥕 Carrots – 2, roughly chopped
- 🌿 Thyme – sprigs
- 🍎 Apples – 2, quartered
- 🧂 Salt and pepper – to taste
- 💧 Goose fat – rendered
Instructions
- 🔥 Preheat oven to 325°F (160°C). Prepare goose by removing excess fat.
- 🍎 Stuff cavity with apples, onions, and thyme. Season generously with salt and pepper.
- ⏳ Place goose on a rack in a roasting pan. Roast for about 2.5 hours, or until internal temperature reaches 165°F (74°C), basting with rendered fat every 30 minutes.
- 🌡️ Let the goose rest for 15-20 minutes before carving.
- 🍽️ Carve and serve with roasted vegetables and pan juices.
