Ingredients
- 🐔 Whole Chicken – 1 (3-4 lbs)
- 🍋 Lemon – 1, quartered
- 🧄 Garlic – 4 cloves, minced
- 🌿 Herbs (Rosemary, Thyme) – 2 sprigs
- 🥕 Carrots – 2, roughly chopped
- 🥔 Potatoes – 4, quartered
- 🧅 Onion – 1, quartered
- 🧂 Salt & Pepper – to taste
- 🫒 Olive Oil – 2 tbsp
Instructions
- 🐔 Preheat oven to 400°F (200°C). Prepare the chicken by patting it dry and seasoning with salt, pepper, minced garlic, and herbs.
- 🍋 Stuff the cavity of the chicken with lemon quarters.
- 🥕 Place carrots, potatoes, and onions in a roasting pan. Drizzle with olive oil and season with salt and pepper.
- 🐔 Place the chicken on top of the vegetables in the roasting pan.
- 🔥 Roast for approximately 60 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before carving and serving.
