Ingredients

  • 🍝 Rigatoni pasta – 1 pound
  • 🧅 Onion – 1 small, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🍅 Tomato paste – 6 ounces
  • 🥛 Heavy cream – 1 cup
  • 🍸 Vodka – 1/4 cup
  • 🧀 Parmesan cheese – grated, for serving
  • 🌿 Fresh basil – chopped, for garnish
  • 🌶️ Red pepper flakes – to taste
  • 🫒 Olive oil – 2 tablespoons
  • 🧂 Salt – to taste
  • 🖤 Pepper – to taste

Instructions

  • 🍝 Cook rigatoni according to package directions.
  • 🔥 Sauté onion and garlic in olive oil until softened. Add tomato paste and red pepper flakes, cook for 2 minutes.
  • 🍸 Deglaze with vodka, simmer until almost evaporated.
  • 🥛 Stir in heavy cream and simmer until sauce thickens. Season with salt and pepper.
  • 🍝 Toss cooked pasta with sauce. Serve with parmesan cheese and fresh basil.
