Ingredients
- 🍝 Rigatoni pasta – 1 pound
- 🧅 Onion – 1 small, chopped
- 🧄 Garlic – 2 cloves, minced
- 🍅 Tomato paste – 6 ounces
- 🥛 Heavy cream – 1 cup
- 🍸 Vodka – 1/4 cup
- 🧀 Parmesan cheese – grated, for serving
- 🌿 Fresh basil – chopped, for garnish
- 🌶️ Red pepper flakes – to taste
- 🫒 Olive oil – 2 tablespoons
- 🧂 Salt – to taste
- 🖤 Pepper – to taste
Instructions
- 🍝 Cook rigatoni according to package directions.
- 🔥 Sauté onion and garlic in olive oil until softened. Add tomato paste and red pepper flakes, cook for 2 minutes.
- 🍸 Deglaze with vodka, simmer until almost evaporated.
- 🥛 Stir in heavy cream and simmer until sauce thickens. Season with salt and pepper.
- 🍝 Toss cooked pasta with sauce. Serve with parmesan cheese and fresh basil.
