Rigatoni all'aragosta

Ingredients
- 1.5 lbs fresh lobster 🦞, cooked and meat removed, shells reserved
- 1 lb rigatoni pasta 🍝
- 1/4 cup olive oil 🫒
- 2 cloves garlic 🧄, minced
- 1/2 cup dry white wine 🥂
- 1 (28 ounce) can crushed tomatoes 🍅
- 1/2 cup heavy cream 🥛
- 1/4 cup chopped fresh parsley 🌿
- Salt 🧂 and pepper to taste
- Pinch of red pepper flakes (optional)🌶️
Instructions
- Bring a large pot of salted water to a boil. Add rigatoni and cook according to package directions until al dente.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
- Add lobster shells to the skillet and cook, stirring occasionally, for 5 minutes to infuse the oil.
- Pour in white wine and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
- Stir in crushed tomatoes, salt, pepper, and red pepper flakes (if using). Bring to a simmer and cook for 15 minutes, stirring occasionally.
- Remove lobster shells from the sauce. Stir in heavy cream and cooked lobster meat.
- Drain pasta and add it to the skillet with the lobster sauce. Toss to coat.
- Stir in parsley and serve immediately. Garnish with extra parsley if desired. Enjoy!😋
