Rigatoni all'aragosta

Ingredients

  • 1.5 lbs fresh lobster 🦞, cooked and meat removed, shells reserved
  • 1 lb rigatoni pasta 🍝
  • 1/4 cup olive oil 🫒
  • 2 cloves garlic 🧄, minced
  • 1/2 cup dry white wine 🥂
  • 1 (28 ounce) can crushed tomatoes 🍅
  • 1/2 cup heavy cream 🥛
  • 1/4 cup chopped fresh parsley 🌿
  • Salt 🧂 and pepper to taste
  • Pinch of red pepper flakes (optional)🌶️

Instructions

  • Bring a large pot of salted water to a boil. Add rigatoni and cook according to package directions until al dente.
  • While pasta is cooking, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  • Add lobster shells to the skillet and cook, stirring occasionally, for 5 minutes to infuse the oil.
  • Pour in white wine and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
  • Stir in crushed tomatoes, salt, pepper, and red pepper flakes (if using). Bring to a simmer and cook for 15 minutes, stirring occasionally.
  • Remove lobster shells from the sauce. Stir in heavy cream and cooked lobster meat.
  • Drain pasta and add it to the skillet with the lobster sauce. Toss to coat.
  • Stir in parsley and serve immediately. Garnish with extra parsley if desired. Enjoy!😋
