Ingredients
- 🍚 Rice – 2 cups
- 🍗 Chicken or Vegetables – 1 lb
- 🧅 Onion – 1 medium, chopped
- 🧄 Garlic – 2 cloves, minced
- 🍅 Tomatoes – 1 can (14.5 oz), diced
- 🌶️ Curry Powder – 2 tbsp
- 🥥 Coconut Milk – 1 can (13.5 oz)
- 🌿 Cilantro – for garnish
Instructions
- 🍚 Cook rice according to package instructions.
- 🔥 Sauté onions and garlic in a pot until softened.
- 🍅 Add tomatoes and curry powder; cook for 5 minutes.
- 🍗 Add chicken or vegetables and coconut milk; simmer for 20 minutes, or until cooked.
- 🌿 Serve curry over rice, garnished with cilantro.
