Ingredients

  • 🍚 Rice – 2 cups
  • 🍗 Chicken or Vegetables – 1 lb
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🍅 Tomatoes – 1 can (14.5 oz), diced
  • 🌶️ Curry Powder – 2 tbsp
  • 🥥 Coconut Milk – 1 can (13.5 oz)
  • 🌿 Cilantro – for garnish

Instructions

  • 🍚 Cook rice according to package instructions.
  • 🔥 Sauté onions and garlic in a pot until softened.
  • 🍅 Add tomatoes and curry powder; cook for 5 minutes.
  • 🍗 Add chicken or vegetables and coconut milk; simmer for 20 minutes, or until cooked.
  • 🌿 Serve curry over rice, garnished with cilantro.
