Ingredients

  • 🍚 Rice – 2 cups
  • 🍗 Chicken or Veggies – 1 lb
  • 🧅 Onion – 1 medium, chopped
  • 🧄 Garlic – 2 cloves, minced
  • 🌶️ Curry Powder – 2 tbsp
  • 🥥 Coconut Milk – 1 can

Instructions

  • 🍚 Cook rice according to package directions.
  • 🔥 Sauté onions and garlic in a pot until softened.
  • 🍗 Add chicken or veggies and curry powder, cook for 5 mins.
  • 🥥 Pour in coconut milk and simmer until thickened.
  • 🍛 Serve curry over rice and enjoy!
