Ingredients
- 🐇 Rabbit – 1 whole, jointed
- 🥓 Bacon – 4 slices, chopped
- 🧅 Onion – 1 large, chopped
- 🥕 Carrots – 2 medium, chopped
- 🍄 Mushrooms – 200g, quartered
- 🌿 Fresh herbs (thyme, rosemary) – 2 sprigs
- 🍷 Red wine – 250ml
- 🧄 Garlic – 2 cloves, minced
- 🥣 Chicken stock – 500ml
- 🧈 Butter – 2 tbsp
- 🧂 Salt & Pepper – to taste
Instructions
- 🔥 Brown the rabbit pieces in a large pot with butter and bacon. Remove rabbit and set aside.
- 🧅 Sauté onion, carrots, and garlic until softened. Add mushrooms and cook until browned.
- 🍷 Deglaze the pot with red wine, scraping up any browned bits. Return rabbit to the pot.
- 🥣 Add chicken stock and herbs. Bring to a simmer, then cover and cook in a preheated oven at 160°C (320°F) for 1.5 hours, or until rabbit is tender.
- ✨ Season with salt and pepper. Serve hot with vegetables or potatoes.
