Ingredients

  • 🐇 Rabbit – 1 whole, jointed
  • 🥓 Bacon – 4 slices, chopped
  • 🧅 Onion – 1 large, chopped
  • 🥕 Carrots – 2 medium, chopped
  • 🍄 Mushrooms – 200g, quartered
  • 🌿 Fresh herbs (thyme, rosemary) – 2 sprigs
  • 🍷 Red wine – 250ml
  • 🧄 Garlic – 2 cloves, minced
  • 🥣 Chicken stock – 500ml
  • 🧈 Butter – 2 tbsp
  • 🧂 Salt & Pepper – to taste

Instructions

  • 🔥 Brown the rabbit pieces in a large pot with butter and bacon. Remove rabbit and set aside.
  • 🧅 Sauté onion, carrots, and garlic until softened. Add mushrooms and cook until browned.
  • 🍷 Deglaze the pot with red wine, scraping up any browned bits. Return rabbit to the pot.
  • 🥣 Add chicken stock and herbs. Bring to a simmer, then cover and cook in a preheated oven at 160°C (320°F) for 1.5 hours, or until rabbit is tender.
  • ✨ Season with salt and pepper. Serve hot with vegetables or potatoes.
