Ingredients
- 🐑 Whole leg of lamb (Raan) – about 2-3 kg
- 🧅 Onions – finely chopped
- 🧄 Ginger-garlic paste – 2 tablespoons
- 🌶️ Red chili powder – to taste
- 🌿 Garam masala – 2 teaspoons
- 🥛 Yogurt – 1 cup
- 🍋 Lemon juice – 2 tablespoons
- 🍃 Fresh coriander – for garnish
- 🫙 Ghee – for cooking
Instructions
- 🔪 Marinate the lamb with yogurt, ginger-garlic paste, red chili powder, garam masala, and lemon juice. Refrigerate for at least 4 hours, or preferably overnight.
- 🧅 In a large pot or Dutch oven, heat ghee and sauté onions until golden brown.
- 🐑 Place the marinated lamb on top of the onions.
- 💧 Add a little water, cover the pot tightly with a lid, and seal the edges with dough to create a dum (slow cooking) effect.
- 🔥 Cook on very low heat for about 3 hours, or until the lamb is tender and falling off the bone. Garnish with fresh coriander before serving.
