Poussin en Cocette "Bonne Femme"

Ingredients

  • 🐥 Poussin (young chicken) – 2
  • 🧅 Onion – chopped
  • 🥓 Bacon – diced
  • 🍄 Mushrooms – sliced
  • 🥕 Carrots – sliced
  • 🌿 Herbs (thyme, parsley) – chopped
  • 🍷 White wine – 1/2 cup
  • 🐔 Chicken stock – 1 cup

Instructions

  • 🔥 Brown poussin in a cocotte or Dutch oven.
  • 🥓 Add bacon and cook until crisp, then add onion, carrots, and mushrooms and sauté.
  • 🍷 Deglaze with white wine, then add chicken stock and herbs.
  • 🐥 Return poussin to the cocotte, cover, and simmer until cooked through.
  • 🌿 Garnish with fresh parsley and serve directly from the cocotte.
