Ingredients
- 🐥 Poussin (young chicken) – 2
- 🧅 Onion – chopped
- 🥓 Bacon – diced
- 🍄 Mushrooms – sliced
- 🥕 Carrots – sliced
- 🌿 Herbs (thyme, parsley) – chopped
- 🍷 White wine – 1/2 cup
- 🐔 Chicken stock – 1 cup
Instructions
- 🔥 Brown poussin in a cocotte or Dutch oven.
- 🥓 Add bacon and cook until crisp, then add onion, carrots, and mushrooms and sauté.
- 🍷 Deglaze with white wine, then add chicken stock and herbs.
- 🐥 Return poussin to the cocotte, cover, and simmer until cooked through.
- 🌿 Garnish with fresh parsley and serve directly from the cocotte.
