Ingredients
- 🍚 Cooked Rice – for serving
- 🥩 Pork Chops – 2 medium
- 🧅 Onion – 1 medium, chopped
- 🥕 Carrots – 1 medium, chopped
- 🥔 Potato – 1 medium, chopped
- 🍛 Curry Roux – 4 cubes
- 💧 Water – 2 cups
- 🛢️ Cooking Oil – for frying
Instructions
- 🔥 Sear pork chops in a pan with oil until browned on both sides. Set aside.
- 🧅 In the same pan, sauté onions, carrots, and potatoes until softened.
- 💧 Add water and bring to a boil. Reduce heat and simmer until vegetables are tender.
- 🍛 Break curry roux into the pot and stir until dissolved and thickened.
- 🥩 Add the seared pork chops back to the curry and simmer for 5 mins. Serve over rice. ✨
